Moritomi （兵庫県 姫路市） 昭和12年創業、82年の歴史を持つ老舗割烹料亭・森富の移転計画。世界遺産姫路城に程近いこともあり、旧店舗の外装は堀の石垣を再現したものであった。地元姫路の人にとって森富と言えば石垣の壁、という印象が強いため、新店舗にもこの石垣のイメージを引き継ぐこととした。外壁に粗い割肌の石と、表面を磨いた光沢のある石をランダムに設置、地面には白黒の砂利を樹脂で固めて水の流れを描き、堀の水面を表現した。また、店内エントランス正面には黒皮鉄の重厚な石垣を模したモニュメントが鎮座する。一部座敷の壁面には同じく石垣を模したデザインを畳で表現、石垣という共通のモチーフを石・鉄・畳の異素材をもって表現した。店内の土壁は一見、我々日本人が慣れ親しんだ土壁のように見えるが、小さなガラスビーズが練りこまれており、一定の角度から見るとガラスビーズに反射した光が壁の表情を変える。生まれ変わった森富は引き継ぐ伝統の重みと、これから始まる新時代への期待を胸に、新たな一歩を踏み出した。Architecture as a practice is deeply related to materiality. But what if we substitute a material by another, in an attempt of keeping its spirit, or temperament? Offering Japanese cuisine Since 1945, Moritomi is relocating to the main street leading, and much closer, to the world heritage Himeji Castle. The design for its new space is inspired by the castle’s stone fortification base and reproduces similar patterns using three different materials: Rough and polished stones at the entrance wall, Black oxide coated steel plates at the reception wall, but also unconventionally using Japanese tatami mats to cover the walls of the banquet room and VIP room. Furthermore, in the same spirit of traditional Japanese stone gardens, the floor was made in small resin coated gravels in white and black. The curves create a flowing movement from out the street to inside the restaurant’s reception hall mimicking the castle’s moat with both metallic and stone walls plunging in it.

いなみころ三木別所店（兵庫県 三木市） 当該店舗の運営企業様からのヒヤリングにおいて最も印象に残っているのは、「従来のうどんとは一線を画す、全く新しいうどんを提供したい」ということでした。うどん という伝統的な食材を新しいスタイルで提供する挑戦に対し、それを内包する建築も、その精神を表現するものであるべきだと考えました。構造は日本伝統の木造軸組工法を採用。現在でも「在来工法」と呼ばれる、日本で最も多く住宅建築に用いられる一般的な工法です。この日本人が最も慣れ親しんでいる工法を用いながら、人々の目に全く新しく映る木造建築の姿を模索しました。建物は三木市が所有する建物であり、つまりは三木市民の財産でもあります。公共建築である以上、地域の人々に認知され、愛される建物であることも重要であると考えました。そこでランドマーク性を高めるため、建物形状を表現する輪郭線を単純化し、建物のアイコン化を図りました。この建築がこの地の風景に新たな表情を与え、地域にアイデンティティをもたらすことを願います。 Udon is a Japanese traditional thick noodles dish still widely popular in today’s Japan. Inami Koro restaurant is reinventing the dish while keeping traditional techniques. Their New restaurant and shop in Miki city emulates their approach in an architectural way by giving the traditional wooden structure a new breath. The structure uses conventional wooden construction methods, while giving it new breath by reshaping few aspects. The roof was rotated around the eaves resulting in a sharp edge and a slant ceiling that crosses the glazed façade towards the center of the building. Miki city wants to develop this new area and needed to attract new businesses. This building acts as a Landmark with its white simplified contour and soft lights glowing through the glazed façade on the evening.

鉄板焼・鮨 TEN（オーストラリア ゴールドコースト） 「天」とは天国の天であり、天地の天、つまりは宇宙を意味します。古くより日本の芸術家達は宇宙という無限の空間を、様々な手法で表現し、その空間を作品として遺してきました。 「天」とはつまり日本の空間芸術の古典的なテーマでもあります。 ここを訪れるお客様に、浮世を忘れた天国での時間と、無限に広がる宇宙空間の神秘を感じて頂ければ幸いです。 This restaurant lies at the ground floor of a hotel located in one of the biggest tourist spot in Australia, Gold Coast. In Japanese, Ten means Heaven and also the universe relative to the Earth. Since time immemorial, Japanese artists and craftsmen have been creating uncountable art works regarding the infinite universe using various techniques. In other words, Ten, the infinite universe, is the main theme running through the Japanese space design from the ancient periods. Inside dining space, round mirrors reminiscent of the Japanese flag on the stone walls give a feeling of floating out of a noble, dignified ambience. In addition, we applied a Japanese classic way of garden architecture using cobble to express a stream of water.
